Mexican Fried Pizza Recipe Celebrates Fusion of Mexican American Food for Dia del Nino

Throughout the year many cultural kids holidays are celebrated around the globe such as Japanese Boys Kite Day (May 5) and Israel Children's Day (November 20). The next big celebration dedicated to children will be marked in Mexico (and by Hispanic families in the U.S. and elsewhere worldwide) with Día del Niño on April 30th.

Though we are not Hispanic, my own hubbie and kids appreciate the cuisine characteristic of this rich culture. So, inspired by my family's love of Mexican food, I've created this original Mexican Fried Pizza recipe that is a fusion of favorite and popular kids American and Mexican foods like pizza, tostadas and salsas.

Día del Niño, a festive kid-friendly celebration that began in 1925, is rooted in the presidential period of Álvaro Obregón. It is one of the older youth-focused holidays in the world and is celebrated at school with students in Mexico with special activities, games and foods. It is also enjoyed by families at home, often including cooking with kids.

Mexican Fried Pizza

This is a twist on classic tastes many of us love here in America, merging fried food, pizza and tostadas into a single delicious, crispy menu item. Why not spend some quality time in the kitchen with your child and make these together? Even younger kids will enjoy building their own Mexican Fried Pizza, choosing from the colorful and healthy toppings you set out for them. Any time of year, I think this would be fun for a kids slumber or birthday party activity, too.


Spicy Hot Peppers & Salsa Verde, MommyBlogExpert.com 
Time to Make: 30 minutes
Makes 8 Servings

Ingredients
  • 8 Soft Corn Tortillas
  • Corn oil for frying
  • 1 jar spaghetti sauce
  • 2 cups shredded mozzarella cheese
  • Your choice of colorful & healthy toppings: fresh basil, sliced avocado, sliced multi-color sweet mini peppers, defrosted frozen corn, hot peppers, etc.
  • Guacamole, sour cream 
  • HERDEZ Salsa Casera Mild
  • HERDEZ Salsa Verde
Directions

1. Add a small amount of corn oil to frying pan and heat till hot, but not smoking.

2. When pan is hot, gently place corn tortillas in pan one at a time, cooking less than a minute per side. Watch carefully to avoid burning, then remove to drain excess oil and cool on paper towels.

3. Now the fun begins for kids. To cut down on the mess, give each child a pie pan to build their creation. Then, set out cool crispy tostadas, the spaghetti sauce, mozzarella cheese and an assortment of freshly cut veggies and other toppings.

4. After the kids have added their choice of raw ingredients, an adult should transfer their gastronomic creations to a pre-heated 400 degree oven. Watching carefully, bake for 1-2 minutes, just until cheese is melted.

5. Serve with bowls of guacamole, sour cream and HERDEZ salsas and other sauces. Most important: enjoy!
