Celebrate the Chinese New Year of the Rabbit with Your Kids by Baking These Homemade Fortune Cookies Together

The Chinese New Year 2011 begins on February 3 and runs for the next 15 days.   This is the Year of the Rabbit, also known by its formal name of Xin Mao, according to ChinaPage.

To enhance this Chinese holiday, as well as create some quality family time, here's a fun kitchen project to bake with your children courtesy of Handstand Kids.
 

Tell My Future Fortune Cookies 

Ingredients:
2 egg whites

1/2 cup sifted flour

1/2 cup sugar

1 teaspoon vanilla extract

2 tablespoons water

Non-stick cooking spray

Pinch of salt

Fortune strips

Tools

Cookie/baking sheet

Mixing bowl

Parchment paper

Spatula

Whisk

Wooden spoon

Measuring spoons

Measuring cups

Instructions:
As a safety reminder for parents, always supervise your child closely when working in the kitchen.

1. Pre-heat oven to 400 degrees Fahrenheit.

2. Line cookie sheet with parchment paper and coat with non-stick cooking spray.

3. Whisk egg whites in the bowl.

4. Mix flour, sugar, water and vanilla into foamy egg white mixture.

5. Beat the mixture with the whisk until smooth.

6. Put 1 tablespoon of the mix onto the parchment paper.

7. Use the back of the wooden spoon to flatten into a circle about 4 inches wide.

8. Repeat this step on the other half of the sheet. Make only 2 cookies per sheet.

9. Put cookie sheet in the oven and bake until golden brown at the edges, about 8 minutes.

10. Wearing oven mitts, carefully remove the cookie sheet from the oven. Using the spatula, quickly remove each cookie from the sheet onto a plate and place a fortune in the center before the cookie hardens.

11. Fold the cookie in half, then point the ends toward each other until they almost

touch.

12. Let the cookies cool, then enjoy!

Good Deed Writing Competition - Enter Now Through February 25, 2011

To spread the word about National Pancake Day a writing contest was just announced today.

IHOP's "Stacks For Good Acts" online contest invites good Samaritans to submit a story of 250 words or less at IHOPPancakeDay.com about a good deed they or someone they know did in 2010.  Entries will be judged on emotional impact, originality and entertainment value. One grand prize entry will receive free pancakes for one year.

Entries can be submitted online starting today and the contest ends at 11:59 p.m. EST on February 25, 2011.  The winner will be announced on National Pancake Day, Tuesday, March 1, 2011 and will receive free pancakes for a year (defined as one free short stack of buttermilk pancakes per day for 365 days) at IHOP.  Enter and get complete "Stacks for Good Acts" contest rules HERE.
