Navigating the new, vast and fast-changing world of influencer marketing is a lot like trying to find your way through the most remote parts of the snowy Sierra Mountains of California in winter. Both can be overwhelming at first glance, not knowing where to start. With such a delicious and healthful product to experiment with, suitable for every generation young and old, I decided to take it one step further. What I came up with is a beautiful looking, high protein and high anti-oxidant Blueberry Pie Parfait recipe which both finicky kids and us kids at heart will love.

Recipe


Blueberry Pie Parfait


This easy-to-make recipe takes blueberry pie to the next level. Not only is it very appetizing to look at, it is even better to eat, especially when you consider that this sweet dessert or healthy breakfast is more filling, nutritious and much lower in calories than indulging in a slice of home baked blueberry pie.

Time to Make: 30 minutes
Makes: 3 servings if using 10 oz parfait glasses 
or 6 servings if made in 5 oz glasses


Ingredients

  • 8 graham crackers broken in half
  • 1/2 c. macadamia nuts
  • 1 T. brown sugar
  • 2 c. fresh blueberries
  • 1/4 t. ground cinnamon
  • 2 T. flour
  • 1/2 c. sugar
  • 32 ozs of non-fat vanilla yogurt
  • 3 scoops Integrated Supplements Vanilla Whey Isolate Protein

Directions

Prepare the Crust

1. In a blender or food processor finely grind the macadamia nuts, then add roughly crumbled graham crackers and brown sugar and continuing chopping until well-ground and blended.

2. Press crumb mixture into a pie pan and bake crust at 425 degrees 6-8 minutes until slightly brown and crunchy.

3. Set aside to cool.


Make the Blueberry Pie Filling

1. Rinse blueberries well and drain before adding to non-stick sauce pan, reserving 1/4 cup of the berries to be used raw as a garnish later.

2. Add the cinnamon, flour and sugar plus 4 T. water to the blueberries in pan.

3. Cook on medium heat about 10-15 minutes or until berry mixture has the consistency and thickness of pie filling.

4. Remove from heat and cool.


Create the Parfaits

1. In a bowl blend the yogurt with the Whey Isolate Protein powder.

2. Remove the pie crust from pan and crumble into a second bowl.

3. To assemble parfaits use a spoon to layer crumbs, yogurt mixture and blueberry filling into each glass, repeat twice. Top each serving with one last spoon of yogurt and garnish with some fresh blueberries and crumbs.

4. Enjoy immediately or you can make ahead, cover with plastic wrap and serve several hours later or even make these in the evening as I did to serve to my family for breakfast the next morning.
