What's New

Gorton's Grilled Fish perfectly-portioned protein-packed products make it easy for you to continue keeping your new year resolutions to eat healthy food. In fact, the Classic Grilled Salmon Fillets variety that I used to make the dish above are wild caught, gluten free and only 100 calories each with two fillets per box. With its rainbow of colors and high anti-oxidant fruits, this is good any time of year but would be particularly in theme to serve as your main course for St. Patrick's Day lunch or dinner.

Recipe

Grilled Teriyaki Salmon
Rainbow Fruit Salad
Yields 2 Servings

Ingredients

• 1 Box Gorton's Classic Grilled Salmon
• 2-4 tbsp of your favorite Teriyaki Sauce
• Green Leaf Lettuce
• Baby Lettuce Blend
• Strawberries
• Blueberries
• Orange
• Blackberries
• Thompson Green Grapes
•

Directions

1. With rack in center, preheat oven to 400 degrees

2. Place frozen salmon fillets on cookie sheet spaced at least a half inch apart

3. Lightly brush top of each piece of fish with 1-2 tablespoons of teriyaki sauce

4. Bake until nicely browned, approximately 14-16 minutes

5. While fish is baking wash lettuce and arrange on two individual plates placing a whole leaf of green leaf lettuce first followed by piling a handful of baby lettuces on each

6. Peel, slice and cut orange segments into half circles; wash and thinly slice strawberries; wash blueberries, blackberries and grapes and leave whole

7. Arrange fruit in lines by color on plate as shown

8. When fish is ready, remove from oven and gently transfer each fillet while still warm onto a plate atop the fruit salad, then serve immediately
