Chicken soup is delicious any time of year but I can't imagine not serving it to my family with matzo balls for the holiday of Passover. If you're not familiar with them matzah balls are a traditional Jewish European boiled dumpling made with matzah meal, eggs and oil. Long story short, you don't even have to be Jewish to enjoy them. The recipe below includes the how to for making the most flavorful homemade chicken soup you've ever tasted as well as to make the light, fluffy matzo balls that are a hallmark of the season.

From Scratch in Just 3 Steps

Matzah Ball Soup Recipe for Pesach

Chicken Soup

Time to Make: 3 hours - Overnight
Makes 16 Servings

Ingredients
  • 1 whole chicken
  • 4 carrots peeled & cut in 1-inch pieces
  • 4 stalks celery & green tops sliced
  • 3 sprigs fresh parsley
  • 1/2 onion, no need to chop
  • 2 t. ground sage
  • 2 t. ground thyme
  • 1 t. marjoram
  • 2 bay leaves
  • 5 whole cloves
  • 3 whole allspice
  • Kosher salt & fresh ground pepper
Directions

1. Place all ingredients in a tall soup pot, add water to cover plus 3-4 inches more

2. Bring pot of soup to a boil slowly, uncovered -- to keep broth clear, immediately after it starts to boil turn down heat to medium/low and cover

3. Simmer for at least 3 hours or overnight as I do for a rich chicken stock

Matzo Balls

Time to Make: 45 minutes
Makes 16 Matzo Balls

Ingredients

Directions

1. In a bowl mix the eggs and oil with a fork by hand just until blended, do not beat

2. The matzo ball mix comes with two bags inside the box, empty both into the egg/oil mixture and gently mix with fork until uniform -- let stand at room temperature for 15 minutes

3. Meanwhile, in a large pot bring 4 quarts of water to a boil, add salt

4. Wet hands with water and form matzo balls about the size of a walnut in the shell, these will double in size when cooked

5. Drop balls one at a time into boiling water, then cover pot with lid and reduce heat to a simmer - cook for 30 minutes without opening the lid

6. Remove matzo balls from pot with slotted spoon and set aside -- add one to each bowl of hot chicken soup immediately before serving and garnish with a fresh sprig of parsley

These are insanely easy to make in just four easy steps. Deviled Egg Chicks
Time to Make: 45 minutes
Makes 12 Chicks
Cost per Chick 34 cents

Ingredients
  • 12 large eggs
  • 1/4 cup plus 2 Tbsp mayonnaise
  • 2 tsp fresh lemon juice
  • 2 tsp Dijon mustard
  • Kosher salt & pepper
  • 1 large carrot, very small capers, fresh dill & chives for decorating

Directions

1. Place the eggs in a large saucepan, add enough cold water to just cover and bring to a boil. Remove from heat, cover the pan and let stand for 11 minutes.

2. Drain the eggs and return them to the saucepan. Gently shake the pan to crack the eggs all over. Run under cold water to cool, then peel the eggs, discarding the shells.

3. Cut the top third off each egg and reserve. Carefully remove the yolks from the bottom two thirds, transfer to a small bowl and mash with the mayonnaise, lemon juice, mustard 1/4 tsp salt and 1/8 tsp pepper. If necessary, slice a thin piece off the bottom of each egg white so they stand straight.

4. Using a 1-inch cookie scoop, scoop the yolk mixture onto the top of each egg white. Very thinly slice the carrot into strips, then cut into feet, wings and beak shapes. Use the capers for eyes and the herbs for beards, hair, and eyebrows, gently placing each in the yolk mixture to make a face. Use the reserved top third of the egg for a hat.

Foldable Paper Pyramid Box Craft


I especially love this foldable pyramid box by Shala Kerrigan of Don't Eat The Paste that is about 2-1/2" tall at its highest point and so easy to make. The uses for this are many: it could be a name card at each place setting at your Seder table, a party favor filled with candy to send home with each your guests, something for the kids to play with during the holiday, or even used in multiples down the center of the table as a centerpiece.

Frog Origami Craft


Though not really a printable, this is a paper folding craft I just had to include it. All you have to do is follow these directions using a green sheet of origami paper to fold a flat piece of paper into a frog. Why not make a bunch of these and pass them out at the Seder when you get to the part about the frog plague?
